Easy Steak Fajitas

Ingredients
- (2 tsp. ground cumin, 2 tsp. chili powder, 1tsp. onion powder, 1 tsp. salt, 1 tsp. crushed red pepper flakes (optional) 2 Tablespoons olive oil.) fajita seasoning mix:
- (3 large bell peppers (sliced), 1 medium red onion (sliced), 8 oz. mushrooms (sliced), 2 garlic cloves (minced), 1 Tablespoon Worcestershire sauce, 1/4 cup lime(about 2 limes), 10 homemade tortillas.) steak fajitas:
- (1 1/2 pounds flank or skirt steak) Flank Steak
- (or 1 1/2 pounds skirt steak) Skirt Steak
Directions
- In a small bowl, stir together cumin, chili powder, onion powder, salt ,and red pepper flakes. Set aside.
- Heat skillet over high heat. Add 2 T. olive oil let heat for a minute.
- Then add your peppers, onion and mushrooms.
- Sauté vegetables until they are crispy tender ( about 7-10 minute).
- During the last 2 minutes of cooking add half of your seasoning mix and your 2 minced garlic cloves. Cook an additional 1-2 minutes.
- Remove vegetables from the skillet and transfer to a serving dish . Keep warm.
- Return skillet to high heat , and add the thinly sliced steak meat , sprinkle with remaining seasoning mix and Worcestershire sauce. Cook the steak ,tossing constantly until the meat is browned about 2-3 minutes. Flank is best not over cooked.
- After meat is cooked , drizzle the lime juice over the meat and toss with vegetables.
- To serve: Serve on warm homemade tortillas, you may eat plain ,with meat mixture or top with sour cream , cilantro , guacamole ,or salsa .
